That is of course assuming that you have a synth that can respond to organ pedals that way. I would imagine that one way to do that would be the K2x00's apparent ability to switch off between several 12-toned tuning tables via SysEx messages, combined with a Max patch to translate pedal depressions into those SysEx messages.
